Sri Lankan Lagoon Crabs are extremely popular across South Asia. This is mainly due to the fact that over the past three decades they have become an iconic brand in Singapore, particularly because of a single crab dish – The Chilli Crab. In fact, the inception of Ministry of Crab can be attributed to Dharshan being inspired after he filmed an episode of his TV Show ‘Culinary Journeys’ in Singapore that focused on Sri Lankan Crab. At MoC, our version of Chilli Crab uses a variety of chillies available in Sri Lanka to first make a spicy chilli stock. This stock is then used to create a sauce that is cooked together with the lagoon crab infusing the fresh, sweet taste of the crab with the heat of the chilli. The resulting dish has an incredible depth of flavours that is warm yet sweet. You can enjoy this iconic dish with either a side of rice or our traditional wood fired bread (Kade Paan).
